Advantage:
- A hydrophilic polysaccharide extracted from seaweed – kelp. Almost odorless and tasteless.

Moisture-sensitive. Soluble in water, forming a viscous colloidal solution, insoluble in ethanol, ether, chloroform, and acids with a pH value lower than 3. The solution does not coagulate when heated.

Sodium Alginate, viscosity 200±20mpa.s.
Application:
- Stabilizer. Thickener.
- Used as an artificial semi-permeable membrane. Mordant.
- Can be used in biochemistry for fixing cells and enzymes; for example, Sodium Alginate can be used for immobilizing glutamate decarboxylase by the Sodium Alginate method.
- Sodium Alginate matrix can be liquefied by adding chelating agents.
